Sizzling Grilled Steak Sliced, Vegetables and Superfood Green Salad

Sizzling steak marinated in olive oil, rosemary and garlic. Served with nutritious vegetables and a green superfood salad.

Ingredients

Sizzling Steak

2-3 tablespoons of chopped rosemary leaves

¼ cup extra virgin cold pressed organic olive oil

2 tablespoons balsamic vinegar

2-3 cloves of garlic chopped

Salt and pepper, to taste

1 cup cherry tomatoes sliced in half

2-3 small (3/4-pound) boneless rib eye steaks, sliced up

1 cup shitake mushrooms, sliced thickly

1 cup artichoke hearts, sliced in half

1 red bell pepper sliced up, into bite size chunks

Superfood Green Salad

1 cup of watercress leaves

1 cup of arugula (rocket) leaves

1-2 shallots or small onions sliced up

Squeeze of lemon

Spinkle of organic sea salt and black pepper

Splash of balsamic vinegar

Directions

1Blend the rosemary, oil, vinegar, garlic, salt and pepper in a blender for 2-3 minutes, and poor half of this smooth puree into a shallow baking dish.

2Add the steak slices to this puree , mix and marinade in the fridge for 30 minutes -2 hours.

3After the marinating period, preheat skillet and cook on medium heat, turning for about 5 to 7 minutes per side - or until cooked as desired.

4Into the skillet - toss in the artichokes, bell peppers and mushrooms and cook for 3-5 minutes on low to medium heat. Turn the heat off and put the pan aside.

Superfood Green Salad

1To make the salad: Take a fresh bowl and add the watercress, arugula (rocket) cherry tomatoes and sliced red onions / shallots.

2Drizzle the salad with the unused half of the marinade mixture. Add a little more olive oil if required. ** Do not add marinate from the raw steaks to the salad!**

3Add the salad to serving platter, layer with the warm vegetable and steak slices. Serve immediately.
